Here is a great recipe sent to me by a loyal reader and it tastes really good.
Cut Broccoli into bite size pieces and lightly steam – cool in ice water to stop the cooking
Cut cauliflower into bite size pieces
Chop 2 stalks of celery
1 cup frozen peas
Cut bell pepper of your choice into bite size pieces.
Toss veggies together.
Add walnuts, dried cranberries, and low fat feta cheese.
Toss with 2 Tbsp Italian dressing This will last for a couple days in the refrigerator. You can also use different combinations of veggies depending on what you have available.
Give it a try and let me know how you like it.

Was wondering why you steamed the broccoli and not the cauliflower- some nutritional reason?
Just preference. There is no nutritional reason. You could steam all the vegetables if you wanted or steam none of them and it would taste just as good. That is the great thing about these types of salads. There are so many ways you can create them to add variety, different flavors and textures to the salad.
