I was sent this delicious looking recipe from Roberta one of my blog readers. I have not tried it yet, but it looks wonderful and I wanted to pass it along to you and include into your healthy eating plans.

It really is simple to eat healthy when you have great tasting recipes and a plan. Here is the recipe below that Roberta feels tastes great and I am sure you will feel the same. I then have the plan for you. Read how it affects peoples lives in a positive way.

Easy Seasonal Roasted Vegetable Recipe
3-4 yellow, green, or round zucchini cut into small chunks
1-2 tomatoes, seeded, and cut into chunks
1 red onion, cut into chunks
1 sweet onino cut inot chunks
2 large cloves of garlic chopped
6-8 baby eggplant, cleaned and cut into quarters
12-14 brussel sprouts trimmed and cut into quarters
2-3 sweet peppers red, orange, etc cut into large strips 10 baby carrots chopped
1-2 jalapenos, seeded and chopped
1/2 cup fresh cilantro or a few sprigs of rosemary
Sea Salt
Cracked Pepper or White Pepper
Mrs Dash Mesquite
Garlic Pam
Olive Oil
Set over at 400. Take jalapenos and tomatoes and cut them in half. Seed with a grapefruit spoon. Jalapenos can be chopped as small as you like. Chop tomatoes. Save chopping the eggplant until last because they will turn colors.
Gather all veggies in a large bowl. Add 1-2 teaspoons sea salt, 1 tablespoon pepper, 2 tablespoons mesquite Mrs Dash, and 2 tablespoons of olive oil. Add cilantro or strip the fresh rosemary. Gently toss all ingredients until you feel olive oil has coated everything. Use your largest sheet pan and coat with garlic pam.
Gently place all veggies in as flat a layer as possible onto pan. Place in oven to begin roasting. Leave the pan alone for about 15 minutes. After 15 minutes, give the pan a good shake and turn the pieces over or around. Lower the oven to 375. Continue cooking at 20 minute increments until the edges of the veggies start to carmelize.
These are wonderful with protein, by themselves on a crisp bread slice, or as the topping for whole grain pasta. You can do something similar on the grill with a roasting pan that will keep all the veggies in.
Total cooking time should be about 45-55 minutes depending upon your oven.

What is Mrs Dash Mesquite?
It is a seasoning. The brand name is called Mrs. Dash and the flavor is Mesquite.
Thanks Jason but this is not familiar in Australia. What is the seasoning made from? I assume it is a mix of several herbs & spices?
Any mesquite flavored seasoning will work. It doesn’t have to be a Mrs. Dash brand. Just use any dry seasoning mesquite flavored spice mix that is available in your area.
