These first 2 sauces compliment chicken, beef or fish very well and should be added to your healthy diet plans.
The last sauce goes better with beef or lamb.
Fresh mango salsa is one of my favorite additions I add to fish or chicken. It is a staple of my healthy eating plans.
I particularly like to make fish tacos with it.
Fresh Mango Salsa:
2 cups diced mango
1/3 cup finely diced red onion
1/2 cucumber (peeled, seeded and diced)
1 jalapeno chili, seeded and minced
Juice of 1 lime
1 Tbsp extra virgin olive oil
1/2 cup chopped cilantro
Combine all the ingredients and season with salt and pepper and then add to your favorite meat.
Smoky Pepper Puree:
1 cup drained and chopped roasted red peppers
2 Tbsp extra virgin olive oil
1/2 canned chipotle pepper, seeded
2 garlic cloves, minced
Blend the ingredients in a food processor until smooth, and add salt to taste.
Classic Chimichurri:
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1/2 cup chopped parsley
1/2 tsp dried oregano
2 tsp minced garlic
1/4 tsp red-pepper flakes
Combine all the ingredients and let the mixture stand for at least 1 hour. Add salt to taste.
I have used the mango salsa recipe for a long time now and can’t remember where I got it from, but the other two sauces I found in a Men’s Health magazine.

Those recipes look awesome. I think the mango one looks like a great summer salsa…especially with fish tacos!!! Adding that jalapeno pepper to the mango makes it “spicy sweet” and I can’t wait to try it.
