Rachael Ray Style Sweet Potato French Fries

Weight Loss RecipesWe made a recipe last night that I wanted to pass along to you.  I didn’t get this from Rachael Ray’s cookbook, but this is the type of recipe that is quick and easy to make just like Rachael Ray would make it.

It is a Sweet Potato French Fry recipe.

Sweet potatoes are a low glycemic load food which means your body doesn’t get flooded with sugar and have to increase a lot of insulin to get the sugar out of the blood.

Spicy Turkey Meatloaf The Way Rachael Ray Would Make It

I have a delicious recipe for you to today that has a ton of flavor and is very quick to make just the way Rachael Ray would do it if she were to put it in here 365: no repeats 30 minute meals cookbook. 

This recipe is loaded with disease fighting nutrients lycopene, lutein and zeaxanthin. This recipe is also a great protein source. It fits perfectly into the carb rotation diet as a no carb meal or combined with other foods on a low carb and high carb day. You can also adjust the level of spiciness by adding more chili powder or less.

Rachael Ray style 30 minute recipes

I made this delicious dinner last night using some examples from Rachael Ray’s 30 minute cookbook.  I take a lot of Rachael Ray’s recipes and make them healthier to suit my fat burning desires. 

 

They are still really quick and easy to make.  Here is one of Rachael Ray’s recipes that I have modified to be a part of my healthy weight loss diet and fall in line with my healthy eating guidelines

 

Chicken and Herb Burgers with Spinach and Mushrooms

1 10 ounce box of frozen chopped spinach, defrosted
2 pounds ground chicken breast
1 shallot, finely chopped
2 Tbsp Dijon mustard
1 Tbsp of basil
2 Tbsp parsley
Salt and Pepper for taste
20 white mushrooms, thinly sliced
2 garlic cloves, chopped
1/2 cup chicken stock
4 slices Swiss cheese
1 tomato, thinly sliced
2 Tbsp extra virgin olive oil

Preheat oven and set to broil

Place the defrosted spinach on a paper towel and wrap the towel around the spinach to squeeze out the excess liquid.  Place the spinach in a mixing bowl and combine with the chicken, shallots, 2 Tbsp of Dijon mustard, basil, parsley, salt and pepper.

Separate the meat into 4 equal patties and place on broiler pan in oven for 5-7 minutes per side. 

While this is cooking preheat skillet and place 2 Tbsp of extra virgin olive oil in the pan.  Add the sliced mushrooms and garlic and cook, stirring occasionally for 4 to 5 minutes or until mushrooms are brown.  Add the chicken broth and cook until the pan is almost dry. 

Top the chicken burgers with the mushroom topping and a slice of swiss cheese.

Makes 4 servings
