Healthy diets with the goal of weight loss can be affected by an outside factor that you might not think of: stress.
Stress leads to a metabolic disruption by raising cortisol levels indefinitely. High cortisol triggers more fat to be stored in cells. Also, the fat can accumulate in your mid-section.

Looks like how his employer dealt with it is the best route for compensation, but he would have to prove that they were negligent and it seems like the majority of the psychological injury resulted from the event itself, so the amount you could claim from the company might not be worth the hassle. Also a claim can take a long time and might worsen his PTSD by having to go over the events repeatedly. Make sure he gets trauma/cognitive behaviour counselling to learn how to cope with the stress and anxiety when it is triggered. Could he get medical retirement from his company? Then maybe he could have an income from that and also do another job that was less stressful? Also read a book called Post Traumatic Stress Disorder by David Kinchin.
