We all know that we should be eating our vegetables. Plenty of colorful vegetables each and every day.  The reality is we only eat on average 1-2 servings of vegetables a day. 

We are falling way short of the suggested amounts and we definitely are not getting in enough colorful vegetables at only 1-2 servings per day.
