Why are Mung Beans healthy?
Well, for one they are high in potassium, iron and fiber but they are also…..
24% protein
What is also unique about mung beans is that they retain most of their high levels of vitamin C even after they are boiled.
Here is how you should eat them and include them in your healthy weight loss diets.
Boil them first and then add them to your next salad or even a casserole dish or entree. Mung beans have a natural sweetness that will add flavor without piling on extra calories or sodium.
You can find mung beans at your local whole foods store or search online and there are dozens of locations to purchase them from online to incorporate into your healthy eating plans.

Is this for the unsprouted mung beans or the sprouts? I soak the mung beans overnight, then sprout them for a few days in a colander with a paper towel. I add them to veggie pancakes as well as salads.
You could really use either. Whatever you prefer would be fine.
