<p>The last sauce goes better with beef or lamb.&nbsp;</p>
<p>&nbsp;</p>
<p>Fresh mango salsa is one of my favorite additions I add to fish or chicken.&nbsp; It is a staple of my healthy eating plans.</p>
<p>&nbsp;</p>
<p>I particularly like to make fish tacos with it.</p>
<p><span id="more-1479"></span></p>
<p><strong>Fresh Mango Salsa:</strong></p>
<p>2 cups diced mango<br />
1/3 cup finely diced red onion<br />
1/2 cucumber (peeled, seeded and diced)<br />
1 jalapeno chili, seeded and minced<br />
Juice of 1 lime<br />
1 Tbsp extra virgin olive oil<br />
1/2 cup chopped cilantro</p>
<p>Combine all the ingredients and season with salt and pepper and then add to your favorite meat.</p>
<p>&nbsp;</p>
<p><strong>Smoky Pepper Puree:</strong></p>
<p>1 cup drained and chopped roasted red peppers<br />
2 Tbsp extra virgin olive oil<br />
1/2 canned chipotle pepper, seeded<br />
2 garlic cloves, minced</p>
<p>Blend the ingredients in a food processor until smooth, and add salt to taste.</p>
<p>&nbsp;</p>
<p><strong>Classic Chimichurri:</strong></p>
<p>1/4 cup extra virgin olive oil<br />
1/4 cup red wine vinegar<br />
1/2 cup chopped parsley<br />
1/2 tsp dried oregano<br />
2 tsp minced garlic<br />
1/4 tsp red-pepper flakes</p>
<p>Combine all the ingredients and let the mixture stand for at least 1 hour.&nbsp; Add salt to taste.&nbsp;</p>
<p>&nbsp;</p>
<p>I have used the mango salsa recipe for a long time now and can&#8217;t remember where I got it from, but the other two sauces I found in a Men&#8217;s Health magazine.</p>

<p>Ingredients:</p>
<p>4 boneless, skinless chicken breasts<br />
4 slices of mozzarella cheese<br />
4 slices of pineapple (1/2-3/4 inches thick)<br />
4 whole grain buns<br />
1/4 cup jalapeno slices<br />
1/4 cup teriyaki sauce</p>
<p>&nbsp;</p>
<p><font size="2"><font face="Arial">Instructions:</font></font></p>
<p><font size="2"><font face="Arial">Marinate the chicken in a sealable bag with the 1/4 cup of teriyaki sauce for at least 30 minutes.&nbsp; Grill the chicken breasts until completely cooked through.&nbsp; Then add the cheese to the top of each chicken breast until the cheese is melted. Remove from grill and set aside.</font></font></p>
<p><font size="2"><font face="Arial">Place buns and pineapple slices on grill.&nbsp; Lightly toast the buns and cook the pineapple until it is soft or about 2 minutes on each side.&nbsp; </font></font></p>
<p><font size="2"><font face="Arial">Place the chicken breast on the bun and top with a pineapple slice and a few jalapeno slices.&nbsp; <br />

<p><strong>Yogurt Parfait</strong> </p>
<p>1.5 cups of Yogurt<br />
2 Tbsp. Of honey<br />
1/2 tsp. vanilla extract<br />
1 cup sliced strawberries<br />
1 cup fresh blueberries<br />
1 cup fresh raspberries<br />
4 tsp. Of low fat granola</p>
<p>&nbsp;</p>
<p><strong>Directions:</strong></p>
<p>
In a mixing bowl, combine the yogurt, honey and vanilla extract. Beat with an electric mixer until fluffy and smooth. Place strawberries evenly among four dishes. Divide blueberries among 4 dishes and top each with 3 tablespoons of yogurt. Divide raspberries among 4 dishes and top each with remaining yogurt mixture. Garnish with teaspoon of the granola.</p>

<p><strong>Spicy Orange Bison Meatballs</strong></p>
<p>Makes 24 Small Meatballs<br />
Prep Time: 30 minutes<br />
Cook Time: 1 hour, 15 minutes</p>
<p><u>Ingredients</u>:</p>
<ul>
<li>1 pound ground bison</li>
<li>1/2 cup plain breadcrumbs</li>
<li>1 egg, beaten</li>
<li>1/2 tsp Worcestershire sauce</li>
<li>1 tsp salt</li>
<li>1/2 tsp fresh ground black pepper</li>
<li>2 cloves garlic, minced</li>
<li>1 tbsp vegetable oil</li>
<li>1/2 cup orange marmalade</li>
<li>1 tbsp soy sauce</li>
<li>1/4 cup rice vinegar</li>
<li>3 cups water</li>
<li>1/2 tsp red pepper flakes</li>
</ul>
<p>
<u>Preparation</u>:</p>
<p>Add the bison, breadcrumbs, egg, Worcestershire, salt, black pepper, and garlic to a mixing bowl. Mix together with wet hands until combined. Divide and roll into small balls (about 2 tablespoons mixture per ball).</p>
<p>Add the oil to a deep skillet (one with a lid), preheat on medium, add the meatballs and brown very well on all sides. When done, pour off excess grease, and add the rest of the ingredients to the skillet and bring to a boil. Turn the heat to low, cover, and simmer slowly for 1 hour &#8211; stirring occasionally.</p>
<p>Uncover, remove the meatballs with a slotted spoon to a plate and reserve. Turn the heat up to high and boil the sauce until it reduces down to about 1 cup, forming a thick glaze. Turn the heat to low, add the meatballs back in and cook until they are heated through. Taste for salt and spiciness, and adjust if needed. Serve hot.</p>

<p>&nbsp;</p>
<p><span id="more-1082"></span></p>
<p><strong>Ingredients:</strong></p>
<p>2 Tbsp Olive Oil<br />
2 oz prosciutto, thinly sliced<br />
4 cups baby spinach<br />
1/4 cup roasted red peppers<br />
2 Tbsp pine nuts<br />
Salt and black pepper to taste<br />
4 boneless, skinless chicken breasts (6oz each), pounded to 1/2&quot; thickness<br />
1/2 cup shredded mozzarella cheese<br />
2 eggs, lightly beaten <br />
2 cups bread crumbs</p>
<p>&nbsp;</p>
<p>1.&nbsp; Heat 1/2 Tbsp olive oil in a saute pan over medium heat.&nbsp; When hot, add the prosciutto strips.&nbsp; Cook until lightly crisp, about 1 minute.&nbsp; Add the spinach, peppers, and pine nuts.&nbsp; Cook until spinach is fully wilted or about 2-3 minutes.&nbsp; Season with salt and pepper and then set to the side. </p>
<p>2.&nbsp; Lay the chicken breasts flat on a cutting board.&nbsp; Season lightly with salt and pepper.&nbsp; Divide the spinach mixture and cheese among the breast, cheating the components towards the top of the chicken.&nbsp; Wrap one end of the chicken around the mix and roll tightly as if making a burrito.&nbsp; </p>
<p>3.&nbsp; Combine the eggs in a shallow bowl.&nbsp; Mix the bread crumbs on a plate.&nbsp; Dredge the chicken first in the eggs, then in the crumbs, making sure they&#8217;re fully coated.&nbsp; </p>
<p>4.&nbsp; Wipe out the saute pan and heat the remaning oil in the pan over medium heat.&nbsp; Add the chicken and cook on all sides until the crust is golden brown and the chicken is cooked all the way through.&nbsp; This should take about 10 minutes.&nbsp; </p>

<p><strong>Ingredients:</strong></p>
<p>1 mango, peeled, pitted and cubed<br />
1 avocado, pitted, peeled and cubed<br />
1/2 red onion finely chopped<br />
Juice of 1 lime<br />
chopped fresh cilantro<br />
2 large white fish (preferably mahi mahi or cod, 1 1/2lb total)<br />
1 Tbsp blackening spice<br />
8 Corn tortillas<br />
2 cups finely shredded red cabbage<br />
Salt and black pepper</p>

<p><strong>Blackening spice:</strong></p>
<p>1 tsp cumin<br />
1 tsp paprika<br />
1 tsp cayenne<br />
1 tsp oregano<br />
1 tsp black pepper</p>
<p>Mix together into a spice which then you will use to sprinkle on the fish before you cook it. </p>

<p>1.&nbsp; Mix the mango, avocado, onion and the juice of 1 lime in a bowl.&nbsp; Season with cliantro, salt and pepper. </p>

<p>2.&nbsp; Heat a stovetop pan until hot and drizzle a light coating of oil over the fish and rub on the blackening spice.&nbsp; Cook the fish for 4 minutes.&nbsp; Carefully flip with a spatula and cook for another 4 minutes and then remove. </p>
<p>3.&nbsp; Warm the tortillas</p>
<p>4.&nbsp; Break the fish into chunks and divide among the warm tortillas.&nbsp; Top with the cabbage and mango salsa.&nbsp; </p>

1 cup shredded part skim mozzarella cheese<br />
6 medium white mushrooms, sliced<br />
1/4 cup part skim ricotta<br />
2 Tbsp grated Parmesan<br />
1 Tbsp Extra Virgin olive oil<br />
2 tsps Balsamic Vinegar<br />
6 oz of chopped chicken, cooked</p>

<p>1.&nbsp; Cook 6oz of chicken and then cut into small chunks.</p>
<p>2.&nbsp; Preheat the oven to 450 degrees.&nbsp; Place a large pizza pan or baking sheet on the bottom of the oven to preheat. </p>
<p>3.&nbsp; Spread the pizza sauce on the pizza crust followed by the spinach and onion.&nbsp; Then sprinkle with the mozzarella and mushrooms.&nbsp; Dollop the ricotta over the pizza and sprinkle wiht the parmesan.&nbsp; Spread the chopped chicken over the pizza and finish by drizzling the olive oil all over. </p>
<p>4.&nbsp; Carefully transfer the pizza to the preheated pizza pan or baking sheet that is in the oven.&nbsp; Bake until the crust is puffed and beginning to color at the edges and the cheese is melted.&nbsp; This should take about 10 minutes.&nbsp; Take the pizza out of the oven and then preheat the broiler. </p>
<p>5.&nbsp; Put the pizza back into the oven once the broiler is up to temperature and broil the pizza until the cheese is browned and bubbling.&nbsp; This will only take about 2-3 minutes.&nbsp; Pull the pizza out and let cool for 5 minutes.&nbsp; Sprinkle with the balsamic vinegar and slice and serve.&nbsp; </p>
